Zucchini Egg Muffins
Servings: 3-4
7-8 Muffins
Ingredients:

6 organic or free range eggs
-
1 large grated zucchini
-
1 tbsp grated parmesan cheese
-
1 slice of feta cheese crumbled

1/4 tsp pimento
-
1/4 tsp salt
-
Pinch of black pepper
Directions:

Grease the sections in a muffin tin with some olive oil.

In a deep bowl, mix all the ingredients together.

Fill each section of the muffin tin halfway with the egg mix. Make sure you don't fill them up too much since they can overflow during cooking time.

Place in the oven at 200 degrees for 20-25 minutes until they become a little brown on top.
