Vegan and Gluten Free Apple Crumble

Servings: 5-6

 

Ingredients:

 

For the topping:

  • 1 cup oat flour (you can make your own by placing gluten free oats in a Nutribullet until you reach the consistency of flour)

  • 1 1/4 cup gluten free oats (I use Red Mill’s Rolled Oats)

  • 2 tsp ground cinnamon

  • 1/4 cup maple syrup

  • 1/2 cup coconut oil

  • A pinch of salt

 

For the filling:

  • 6 medium apples (I use red apples) peeled and diced into medium sized cubes

  • 3 tbsp coconut sugar

  • 3 tsp ground cinnamon

  • 3 tbsp freshly squeezed lemon juice

 

Directions:

  1. Heat the oven to 150 degrees.  

  2. Mix the topping ingredients together until you have a dough like consistency.

  3. Mix the filling ingredients together.

  4. Place the filling ingredients in the base of a medium sized baking dish.

  5. Spread out the topping on the filling. It might be easy for you to flatten the topping in the your hands and place it evenly on top of the filling.

  6. Place the crumble into the middle shelf of the oven and bake for 25-30 minutes until the topping is crispy.

  7. Serve hot.
