Tomato Puffs

Servings: 3-4

 

This recipe is perfect if you’re looking for a quick appetizer that complements your salads and main dishes. It is very simple to make, it literally takes 5 minutes to prep. 

 

 

Ingredients:

  • 1 packet of frozen puff pastry squares, they usually come in a pack of ten. For this recipe, I will be making 6 puffs.

  • 2 medium sized tomatoes cut into round slices

  • 5 tbsp of grated parmesan cheese

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • 3/4 tsp garlic powder

  • 3/4 tsp onion powder

  • Olive oil

Directions:

  1. Mix all the spices together and set aside.

  2. Separate the puffs and line them up in a baking tray.

  3. Sprinkle a generous amount of the spice mix on each puff.

  4. Place 2-3 slices of tomatoes on the puff pastry, enough to cover it well. You can cut the tomato slices in halves or quarters if need be.

  5. Add a little less than a tablespoon of parmesan cheese.

  6. Sprinkle more of the spice mix on top of the parmesan cheese.

  7. Drizzle a few drops of olive oil on each puff.

  8. Place the puffs in the oven for 10 minutes at 180 degrees. You will know they are done when they start to become crispy and toasty from the top and bottom.
