Sugar Free Banana Coconut Loaf

Ingredients:

3/4 cup coconut flour

1/4 cup flaxseed meal or you can ground the flaxseeds yourself

2 tsp baking powder

2 tsp cinnamon powder

4 large ripe bananas

3 tbsp egg replacer mixed with 6 tbsp of water, leave aside to harden for a minute before mixing it with the rest of the ingredients. Alternatively, mix 1 tbsp of chia seeds with 3 tbsp water and let sit for 5 minutes before using

1/4 cup melted coconut oil

1/3 cup creamy peanut butter

2/3 chopped walnuts
Directions:

Preheat the oven to 160 degrees and grease a loaf pan with coconut oil.

In a bowl, mix all the dry ingredients, the coconut flour, flaxseed meal, baking powder, cinnamon powder and walnuts and set aside.

In another bowl, peel and mash the bananas.

Add the coconut oil and peanut butter to the bananas.

Add the egg replacer (or the chia and water mix) and mix all the wet ingredients together.

Add the wet ingredients to the dry ingredients and mix well with a spatula.

Place the mix in the loaf pan and place in the oven for 40-50 minutes until crispy on top and smooth on the inside.

Serve warm.
Note: Make sure the bananas you use are very ripe, to ensure the sweetness of the loaf.
