Oven Roasted Potato Cubes

Servings: 2-3

 

Ingredients:

  • 6 large potatoes 

  • Water for boiling the potatoes

  • Himalayan salt (1/2 tsp)

  • Paprika or your choice of herbs or spices for flavoring

  • 4-5 tbsp olive oil

 

Directions:

  1. Bring a medium pot halfway filled with water to a boil.

  2. Wash and peel the potatoes.

  3. Cut the potatoes into small cubes.

  4. Add the potatoes to the boiling water until they are half boiled. They should still have a bit of a bite to them.

  5. Strain the water from the potatoes and place them in a large Tefal or non-stick pan. Make sure they are spread out, use two trays if needed.

  6. Add salt, paprika and olive oil and stir the potatoes well.

  7. Place the potatoes in the oven at 250 degrees. They should take 75-90 minutes to fully cook.

  8. Take them out when crispy and a little brown.
