Mom’s Granola Recipe

Ingredients:

3 1/2 cups whole oats (preferably steel cut)

1/2 cup sunflower seeds

1/2 cup flaxseeds

1/2 cup chia seeds

1 tbsp cinnamon powder

1/2 cup almonds
-
1/2 cup desiccated coconut
-
1/2 cup chopped almonds
-
1/2 cup walnuts
-
1/2 cup chopped dried cranberries
-
1/2 cup chopped dried apricots
-
1/2 cup coconut oil
-
1/2 cup honey (I use acacia organic honey)

1 tsp vanilla
Directions:

Preheat the oven at 150 degrees.

Mix the coconut oil, honey and vanilla together and put aside.

Mix all the dry ingredients except for the desiccated coconut and the dried fruits.

Add the oil and honey mix to the dry ingredients and rub them together well with your hands.

Line a cooking tray with parchment paper and spread the granola out.

Put in the oven over medium to low heat and stir the granola every 5-10 minutes.

When the granola starts to get a bit toasty add the desiccated coconut, stir and place again in the oven.

The granola is done when the ingredients become toasty and dry.

Add the dried fruits.
I like to have my granola on its own or with some berries. You can also have it with your favorite yogurt, milk or juice.
