Lentil Endive Salad

My dearest oldest friend shared this recipe with me. She visited me this past summer in Beirut and funny enough we spent quite a bit of time in the kitchen! She's always been a great cook, so naturally this salad just rocks!
Ingredients:
For the Salad:

1/2 cup boiled lentils seasoned with 1 tsp cumin, 1/2 tsp paprika, 1/4 tsp turmeric, 1/2 tsp Himalayan salt

1 cup thinly sliced endive leaves

2 medium beetroots boiled and diced

Two thick slices of Valbreso feta cheese crumbled
For the dressing:

4 tbsp olive oil

2 tbsp balsamic vinegar
-
1 tsp grainy mustard
-
1/4 tsp yellow mustard

1 tsp honey
-
1 garlic clove mashed
Directions:

Combine all the salad dressing ingredients and mix well with a whisk.

Mix the lentils with the endive, beetroots and feta cheese.

Add the dressing and mix.
