Coconut Pancakes
Servings: 1-2
3 medium fluffy pancakes
Ingredients:

1/4 cup unsweetened almond milk or coconut milk

2 organic eggs
-
1 tbsp maple syrup
-
1/2 tsp vanilla
-
1/4 cup coconut flour
-
1/4 tsp baking soda
-
Pinch of salt
Directions:

Mix the milk with the organic eggs and maple syrup in a bowl.

In another bowl, mix the coconut flour, baking soda and salt.

Add the dry ingredients to the first bowl and mix just a little, until the batter is blended.

Grease a pan with some coconut oil.

Using a ladle, divide the batter into three portions and place them in the pan until one side of the pancakes is brown.

Flip the pancakes onto the other side using a spatula and wait for them to brown.

Serve with your favorite berries and some banana.
