Coconut Pancakes

Servings: 1-2

3 medium fluffy pancakes

Ingredients:

  • 1/4 cup unsweetened almond milk or coconut milk

  • 2 organic eggs

  • 1 tbsp maple syrup

  • 1/2 tsp vanilla

  • 1/4 cup coconut flour

  • 1/4 tsp baking soda

  • Pinch of salt

 

Directions:

  1. Mix the milk with the organic eggs and maple syrup in a bowl.

  2. In another bowl, mix the coconut flour, baking soda and salt.

  3. Add the dry ingredients to the first bowl and mix just a little, until the batter is blended.

  4. Grease a pan with some coconut oil.

  5. Using a ladle, divide the batter into three portions and place them in the pan until one side of the pancakes is brown.

  6. Flip the pancakes onto the other side using a spatula and wait for them to brown.

  7. Serve with your favorite berries and some banana.
