Crunchy Cabbage Salad
Servings: 3-4
Ingredients:
For the Salad:

1 cup thinly sliced white cabbage

1/2 cup thinly sliced purple cabbage (optional)

1/2 cup grated carrots
-
1/2 cup of sweet corn (fresh or frozen)

1/4 cup pumpkin seeds
For the dressing:

3 tsp good quality creamy peanut butter

3 tsp lemon juice
-
3 tsp rice vinegar
-
3 tsp extra virgin olive oil
-
3 tsp honey
-
2 tsp low sodium soy sauce
Directions:

Mix all dressing ingredients together very well with a hand mixer until you have a creamy texture.

With your hands, slowly add the dressing into the salad ingredients to make sure it is evenly blended.
