Orange Chia Muffins

Ingredients:

75 grams whole wheat flour

75 grams gluten free flour or rice flour

1/2 tsp bicarbonate of soda

3/4 tsp baking powder

4 tbsp coconut sugar

1 tsp chia seeds

2 tbsp almond milk

1 cup full fat yogurt
-
3 tbsp maple syrup
-
1 tbsp coconut oil

Finely grated zest of two medium sized oranges

Juice of two medium sized oranges
Directions:

Preheat the oven at 180 degrees and grease the muffin tin with some odorless coconut oil.

Mix the flours, bicarbonate of soda, baking powder, coconut sugar and chia seeds in a bowl.

In another bowl, mix the almond milk, yogurt, maple syrup, coconut oil, orange zest and orange juice very well.

Add the ingredients of the second bowl to the first bowl and mix well with a whisk until smooth.

Pour into the muffin tin and place in the oven for 25-30 minutes. To check if they are done, place a toothpick in the center of a muffin. If the mixture does not stick to it, then the muffins are ready.
