Cauliflower Soup
Servings: 3-4
Ingredients:

1 big head of cauliflower cut into little florets

1 medium carrot diced into cubes

1 medium potato diced into cubes

1 medium onion diced into cubes

1 tbsp apple cider vinegar

1 tbsp olive oil

4 garlic cloves mashed

Salt and pepper to taste

1/4 tsp nutmeg

1/4 tsp chili powder
-
1 tsp cumin

1/2 lemon juiced
Directions:

Soak the cauliflower in water with 1 tbsp of apple cider vinegar for half an hour. Remove half a cup of the cauliflower and set it aside.

Place the rest of the cauliflower, potatoes, carrots and onion in a pot and cover with water and let the vegetables boil until soft.

While cooking the vegetables, place the remaining cauliflower in boiling water for ten minutes.

Blend the rest of the vegetable mix in a food processor until you get a creamy texture. Add the lemon juice and adjust the taste with salt, pepper and cumin.

Fry the mashed garlic with the oil. Add them to the soup.

Add the remaining small pieces of cauliflower on top.
