My Very Simple Banana Acai Berry Bowl
Servings: 1
My very good friend introduced me to the acai berry bowl and it was love
at first sight. I kept going back to the place for more, they soon knew me
by name and I did not need to explain my order, it was just ready in minutes.
Eventually, I got curious and kept trying to make it at home until I got it right.
And now my kids know that my acai bowl is my sweet tooth fulfillment.
So while they munch away on chocolates and candy, Mom usually has her
acai berry bowl and loves every bite!
So let’s get one thing straight. Acai berries are grown in Central and South
America, so for those of us living in the Middle East, we are not going to be
getting them fresh. Instead, I buy the freeze-dried organic powder online,
the 113g sachets last me a while, since I only use two teaspoons per serving.
For this recipe, you will also need a blender, I use the NutriBullet, but any other
brand would do.
Ingredients:
-
2 large bananas peeled, cut in half & placed in the freezer for 5-6 hours
-
1 full tsp almond butter
-
2 tsp acai berry powder
-
50-100ml almond milk
For the toppings:
-
2 tbsp granola (refer to my granola recipe or you can use the store bought version)
-
1 tbsp dried coconut flakes
-
3 large strawberries diced
-
7-8 blueberries
Other topping options: Bananas, blackberries, chia seeds, flaxseeds, almonds, walnuts, sunflower seeds
Directions:
-
Place the frozen bananas first into the blender, followed by the almond butter, the acai berry powder, then almond milk.
-
Blend. I usually mix it up with a spoon between cycles to make sure all the bananas are blended and I go for at least three cycles.
-
In a wide brimmed bowl, pour the blended mix out, it is ok if a few banana chunks are still in there, they actually taste really good.
-
Top the blended mix with granola, coconut flaxes and berries.
Tip:
Plan to eat the acai berry bowl immediately, while still cold, I am not a fan of it when it get slightly warmer, it becomes runny and it is not as tasty anymore.
